Trailer Park Casserole: Our Signature casserole! Chicken breast, corn, sautéed tomatoes and onion, green chilies, tortillas, all in an incredible cheese sauce. I found this recipe at a funeral in Mississippi by lifting up the casserole dish at the “funeral buffet” and then tracking down the Aunt who made it. For 4 adults, $20.00 For 8-10 adults, $40.00
Egg and Sausage Casserole: My favorite for brunch on a lazy Sunday! Eggs and sausage in a creamy sauce with bread and lots of cheese. It doesn’t get any better than sliding the casserole into the oven and going back to bed until it’s done! For 4 adults, $20.00 For 8-10 adults, $38.00.

Collard and Ham Egg-rolls $3.50 pp (My take on a Chinese tradition. Filled with collards, red wine vinegar, carrots, red onion, lime zest, ginger, country ham, & cayenne, cut on a bias for ease of serving and drizzled with a sweet lime sauce. These have been popular with people who don’t even like collards!)
Shrimp and grits $ 8.25 pp Grits with Sharp Cheddar, White Cheddar, Parmesan, Gruyere, garlic, cream, butter, shrimp, bacon, scallions, ripe tomato, and a homemade sauce.
Chicken Fingers $4.75 pp 1.5oz chicken strips, battered and dredged by hand in my own blend of traditional spices, served with Blue Cheese, BBQ and Ranch dipping sauces.
Chicken and Dumplings $4.75 pp made just like my great granny, Granny and Mama made then, from scratch, in their own thick sauce with plenty of pepper
Low Country Crab-cakes with lemon caper sauce $8.25 per person
Black-eyed pea caviar $3.25pp, presented with corn chips for dipping
Silver queen corn soufflé $4.25pp, a NC perennial favorite, topped with a roasted red pepper sauce that brightens the plate and the palate!
Sweet potato ravioli in a blue cheese sauce $4.50 pp, top with toasted, spiced pecans. NC produces more Sweet potatoes than anywhere else in the world and this is a dish anyone, from anywhere, will love
Beef Tenderloin $10.95 pp Perfectly tender beef, presented with puffy yeast rolls, coarse Dijon mustard and smoky horseradish mayonnaise.
Turkey Breast $6.75pp Moist, tender, center, breast cut lightly seasoned and served with puffy yeast rolls, marmalade mayonnaise and coarse Dijon.
Baked Brie $3.00 pp Brie baked in puff pastry with your choice of caramel, raspberry, or fig.Presented with assorted crackers
Herbed cheesecake $3.25 pp Cream cheese based savory spread containing 22 herbs, red onion and finely ground proscuitto served with an assortment of crackers.
Skewers of basil, mozzarella and tomato (they make a nice “food bouquet” on the buffet) $1.50pp
Bite sized Gouda and caramelized onion quesadillas $2.00 pp
Wontons filled with pulled eastern NC BBQ and slaw with a Red Thai curry/coconut dipping sauce (I call these the Thaiheel Wontons) 4.25pp
